Tasting
Beautiful, very deep, very intense carmine colour. The nose is complex, with notes of black fruit, ripe red fruit, plum, mixed with toasted notes of toast. This wine is concentrated on the palate, with tight tannins, fat, volume, notes of mocha, blackberry, lots of roundness and fine tannins on the finish.

Vinification and aging
Traditional vinification, total destemming, vatting for 15 to 20 days, aging for a few months in vats, pumping over and daily racking.

Chicken fricassee with wild mushrooms, 7-hour leg of quince, pheasant terrine with walnuts, duck breast with red fruits.
