Very beautiful purple color, very intense, with purplish, lively reflections. The nose is very intense, with lovely aromas of black fruit, blackberry, blueberry, blackcurrant jelly, mixed with notes of spices and roasting. The mouth presents a very nice balance, with fine, tight, chiseled tannins, a nice volume in the middle of the mouth and a nice length in the finish on spicy notes.

Vinification and aging
Traditional vinification, total destemming, vatting for 15 to 20 days, aging for a few months in vats, pumping over and daily racking.

Chicken fricassee with wild mushrooms, 7-hour leg of quince, pheasant terrine with walnuts, duck breast with red fruits.
